(Almost) No Recipe Required: Cilantro Lime Burrito Bowls

You know when you know something is gonna be good? Like, tasty? Like, you’re excited to eat it before you’ve even started cooking it? That’s how I felt about these burrito bowls, courtesy of Fork Knife Swoon. I knew they were going to be hearty and savory and something I wanted to take big fat bites of. (Also, I love lime. And carbs. So, easy sell?)

Plus, look at all that GREEN. They look so healthy! But enough mooning over them – here’s the basic situation.

Ingredients for Burrito Bowl with Cilantro Lime Vinaigrette

The makeup is simple: Black beans. Rice. Cilantro lime vinaigrette. Toppings.

You cook the rice, heat the beans (and season to taste), and top with a pile of greens. I added avocado, goat cheese, and jalapeños, but Laura has some suggestions for you too. The vinaigrette is olive oil, lime, cilantro, salt, and pepper. Plenty of room for creativity, and it comes together in a flash!

Oh – and it’s good. Big fat bites good. Tangy and savory and if you can swing it, I say GO FOR CHEESE. And extra lime. And avocado. I’m putting this on the lazy-dinner regular rotation list.
